    Luscious Cherry Lemon Cookies Recipe

    These Luscious Cherry Lemon Cookies are a delightful blend of sweet and tart flavors, perfect for any occasion.

    The soft, buttery cookie base is complemented by the rich cherry jam filling and a tangy lemon drizzle.

    Easy to make and sure to impress, these cookies are ideal for sharing with family and friends.

    Luscious Cherry Lemon Cookies Recipe

    Ingredients:
    – 1 cup unsalted butter, softened
    – 1/2 cup granulated sugar
    – 2 large eggs
    – 1 teaspoon vanilla extract
    – 2 3/4 cups all-purpose flour
    – 1 teaspoon baking soda
    – 1/2 teaspoon baking powder
    – 1/2 teaspoon salt
    – 1 cup cherry jam
    – 2 cups powdered sugar
    – 2-3 tablespoons lemon juice
    – Zest of 1 lemon
    – Yellow food coloring (optional)

    Directions:

    1- Preheat the Oven:
    – Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

    2- Cream the Butter and Sugar:
    – In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

    3- Add Eggs and Vanilla:
    – Beat in the eggs one at a time, then add the vanilla extract.

    4- Combine Dry Ingredients:
    – In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.

    5- Mix Wet and Dry Ingredients:
    – Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

    6- Form Cookies:
    – Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
    – Using your thumb or the back of a spoon, make an indentation in the center of each cookie and fill with a small amount of cherry jam.

    7- Bake:
    – Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes, then transfer to wire racks to cool completely.

    8- Prepare Lemon Frosting:
    – In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Add yellow food coloring if desired.

    9- Frost the Cookies:
    – Drizzle the lemon frosting over the cooled cookies and let it set before serving.

    – Prep Time: 20 minutes
    – Cooking Time: 12 minutes
    – Total Time: 32 minutes
    – Calories: 180 kcal
    – Servings: 24 cookies
