    Low Carb Unstuffed Cabbage Casserole Recipe

    **Ingredients:**
    – 3 tablespoons oil
    – 1 lb ground beef
    – 1 sweet onion, chopped
    – 1 orange bell pepper, seeded and chopped
    – 3 garlic cloves, chopped
    – 14 oz can fire-roasted diced tomatoes
    – ½ teaspoon smoked paprika
    – ½ teaspoon dried oregano
    – ½ teaspoon garlic powder
    – ½ teaspoon onion powder
    – Salt and pepper, to taste
    – 1 small head green cabbage, cored and chopped
    – 2 cups shredded cheddar/Jack cheese

    **Directions:**
    1. Heat oil in a large pan or Dutch oven over medium-high heat. Add ground beef, chopped onion, and orange bell pepper. Cook until beef is browned and onions are translucent.
    2. Stir in chopped garlic and sauté for an additional minute.
    3. Add fire-roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper to the pan. Top with chopped cabbage. Cover and cook for 15-20 minutes, or until cabbage is tender.
    4. Once cabbage is tender, top mixture with shredded cheese. Cover the pan and allow cheese to melt.
    5. Serve hot and enjoy the delicious flavors of this comforting dish!
