Loaded Carne Asada Fries with Creamy Guacamole

Ingredients (Serves 4)
For the Carne Asada:
1 lb (450g) flank or skirt steak
2 tbsp olive oil
1 tbsp fresh lime juice
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp dried oregano
Salt and freshly ground black pepper, to taste
For the Fries:
1 lb (450g) frozen French fries (or homemade fries)
1 cup shredded cheddar or Monterey Jack cheese
1/2 tsp smoked paprika (for seasoning fries)
For the Guacamole Topping:
2 ripe avocados
1 small tomato, diced
1/4 small red onion, finely diced
1 jalapeño, seeded and diced (optional)
1 tbsp lime juice
1/4 cup fresh cilantro, chopped
Salt to taste
For Garnish & Toppings:
1/2 small white onion, diced
1/4 cup Mexican crema or sour cream
1/4 cup fresh chopped cilantro (optional)
Instructions:
1. Marinate the Carne Asada Steak:
In a bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, paprika, oregano, salt, and pepper.
Add the steak, coating it thoroughly. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
2. Prepare the Fries:
Preheat oven to 425°F (220°C).
Spread the fries evenly on a baking sheet and bake according to package directions (20–25 minutes). Sprinkle smoked paprika over fries halfway through.
Once golden and crispy, top with shredded cheese and return to the oven for 2–3 minutes until cheese melts.
3. Grill the Steak:
Preheat grill or skillet to medium-high (about 400°F/200°C).
Grill steak for 4–5 minutes per side, or until cooked to desired doneness. Let rest for 5 minutes, then slice into bite-sized pieces.
4. Make the Fresh Guacamole:
Mash the avocados in a bowl, leaving them slightly chunky.
Mix in diced tomato, red onion, jalapeño, lime juice, cilantro, and salt. Set aside.
