Ingredients:
For the Pasta & Chicken
20 oz cheese tortellini (fresh or refrigerated)
1 lb chicken breast or thighs, bite-sized
1 tbsp Cajun seasoning (plus more to taste)
Salt, black pepper, garlic powder (to season)
2 tbsp olive oil
For the Cajun Alfredo Sauce
3 tbsp butter
4 cloves garlic, minced
1 red bell pepper, diced
1 cup baby spinach (optional)
¾ cup heavy cream
½ cup milk or chicken broth
¾ cup grated Parmesan cheese
½ cup shredded mozzarella (optional, extra creamy)
Optional Garnishes
Red pepper flakes, fresh parsley, cracked black pepper
Directions:
Boil tortellini in salted water according to package directions. Drain and set aside.
Toss chicken with Cajun seasoning, salt, black pepper, and garlic powder.
Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes until golden and cooked through. Remove and set aside.
In the same skillet, melt butter. Add garlic and red bell pepper; sauté 3–4 minutes until fragrant and tender.
Stir in heavy cream and milk (or broth). Bring to a gentle simmer, then add Parmesan cheese until smooth and creamy. Add spinach if using.
