    Looking for a hearty and satisfying meal? This **Loaded Baked Potato with Steak Bites** recipe combines perfectly baked russet potatoes with tender steak bites, all topped with a creamy Parmesan sauce. It’s the ultimate comfort food, perfect for family dinners or special occasions.

    Ingredients:
    – 4 large russet potatoes, scrubbed clean and patted dry
    – 4 tablespoons olive oil
    – 1.5 tablespoons sea salt
    – 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
    – 2 teaspoons kosher salt
    – 2 tablespoons garlic, minced (about 8-10 cloves)
    – 6 tablespoons butter, softened
    – 2 tablespoons low-sodium Cajun seasoning (adjust salt accordingly)
    – 4 tablespoons avocado oil, divided
    – 1 1/2 cups heavy cream
    – 2/3 cup parmesan, grated
    – 2 tablespoons fresh parsley, minced
    – 2 wedges lemon, juice of
    – 1/2-1 teaspoon red pepper flakes
    – 1 teaspoon freshly cracked pepper

    Instructions:

    1. Preheat Oven for Baked Potatoes
    Preheat your oven to 425°F (220°C). Line a baking pan with parchment paper. Rub the potatoes with olive oil and sprinkle all sides with sea salt. Place them on the prepared pan and bake for 50-60 minutes, or until tender when pierced with a fork.

    2. Prepare the Steak Bites
    While the potatoes are baking, trim excess fat from the steak and cut it into 2″ pieces. Drizzle the steak with 2 tablespoons of avocado oil and coat liberally with Cajun seasoning.

    3. Sear the Steak
    Heat 2 tablespoons of avocado oil in a skillet (cast iron works great) over medium-high heat. Sear the steak bites for about 2 minutes undisturbed until golden. Flip and cook for an additional minute, then lower the heat and cook for 1 more minute. Move the steak to one side of the pan.

    4. Garlic Butter Steak
    Add 2 tablespoons of butter and 1 tablespoon minced garlic to the other side of the pan. Sauté until fragrant, then toss the steak bites in the garlic butter. Cook for an additional minute. Remove from heat and tent the steak with foil to keep warm.

    5. Make Parmesan Cream Sauce
    In the same pan, add the remaining 2 tablespoons of butter and the remaining minced garlic. Sauté until fragrant. Slowly whisk in the heavy cream and bring to a simmer. Let it reduce for 3-5 minutes, then add red pepper flakes and parmesan. Stir until the sauce thickens. Season with salt and freshly cracked pepper as needed. Remove from heat and stir in fresh parsley and lemon juice.

    6. Assemble the Loaded Baked Potatoes
    Once the potatoes are done baking, lift and drop each potato from about 12 inches off the pan to fluff the inside. Cut a slit down the center of each potato, fluff the insides with a fork, and spread with the remaining butter.

    7. Serve
    Serve the baked potatoes topped with tender garlic butter steak bites and drizzle with the rich Parmesan cream sauce.

    Pro Tips:
    – Use a cast iron skillet for the steak bites to get a perfect sear.
    – If you prefer a spicy kick, increase the amount of red pepper flakes in the sauce.
    – For extra flavor, top the loaded potatoes with crispy onions or a sprinkle of fresh herbs.
