Lemon Sugar Cookies Recipe – Soft and Chewy

Ingredients
– 2 sticks unsalted butter, room temperature (1 cup / 230 grams)
– 1 ½ cups granulated sugar (300 grams)
– 3 tbsp lemon zest
– 2 tbsp fresh lemon juice
– 1 large egg
– 3 cups all-purpose flour (360 grams)
– 1 tsp baking soda
– ¼ tsp salt
– ¼ cup sugar, for rolling cookies (50 grams)
Instructions
1. Prepare the Dough: In a mixing bowl, beat the butter, sugar, and lemon zest with an electric mixer for 1-2 minutes until creamy.
2. Add Wet Ingredients: Add in the lemon juice and egg, then beat again to combine.
3. Mix Dry Ingredients: Gradually add in the flour, baking soda, and salt, mixing by hand with a spatula until well combined.
4. Chill the Dough: Cover the bowl with plastic wrap and refrigerate for 30-60 minutes.
5. Preheat the Oven: Preheat your oven to 350ºF (175ºC). Place ¼ cup of sugar in a bowl for rolling the cookies.
6. Form Cookies: Use a cookie scoop to form dough balls, then roll each ball in the sugar. Place the cookies 2 inches apart on a silicone-lined baking sheet.
7. Bake: Bake for 11-13 minutes, or until the edges have a faint golden color.
8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
Notes
– Chilling the Dough: Refrigerating the cookie dough will result in chewier and thicker cookies as they won’t spread as much. If you dislike chilling dough, try to refrigerate it for at least 15 minutes, or between baking batches.
