    Lemon Pie Cobbler

     

     

    This Lemon Pie Cobbler is a refreshing dessert that brings together the vibrant tang of lemon with a soft, sweet cobbler topping. The recipe is easy to make, featuring a luscious lemon filling and a golden, cake-like crust. Perfect for any occasion, it offers a delicious balance of tart and sweet flavors. Whether served warm or at room temperature, this dessert is sure to impress. Enjoy a slice with a dusting of powdered sugar for an extra touch of sweetness!

    Ingredients:

    – 1 cup granulated sugar
    – 1/4 cup cornstarch
    – 1/4 teaspoon salt
    – 2 cups water
    – 1/2 cup freshly squeezed lemon juice
    – 1 tablespoon lemon zest
    – 2 large eggs
    – 1 teaspoon vanilla extract
    – 1 cup all-purpose flour
    – 1 1/2 teaspoons baking powder
    – 1/4 teaspoon baking soda
    – 1/4 teaspoon salt
    – 1/4 cup unsalted butter, melted
    – 1/2 cup milk
    – 1/4 cup granulated sugar (for topping)
    – Optional: powdered sugar for dusting

    Instructions:

    1. Preheat Your Oven:
    Start by preheating your oven to 350°F (175°C). Grease a 9-inch square baking dish or another suitable oven-safe dish.

    2. Prepare the Lemon Filling:
    In a medium saucepan, whisk together 1 cup of sugar, cornstarch, and 1/4 teaspoon of salt. Gradually add the water, whisking until the mixture is smooth. Cook over medium heat, stirring constantly, until it thickens and turns clear (about 5-7 minutes). Remove from heat, then stir in the freshly squeezed lemon juice, lemon zest, eggs, and vanilla extract. Pour the lemon mixture into your prepared baking dish.

    3. Make the Cobbler Topping:
    In a separate bowl, combine the flour, baking powder, baking soda, and 1/4 teaspoon of salt. Add the melted butter and milk, stirring until just combined. Spoon the batter over the lemon filling, spreading it evenly. It’s okay if the batter doesn’t cover all of the filling.

    4. Add a Sweet Sugar Topping:
    Sprinkle 1/4 cup of sugar evenly over the cobbler batter.

    5. Bake to Perfection:
    Bake for 35-40 minutes, or until the cobbler topping is golden brown and the lemon filling is bubbling.

    6. Cool and Serve:
    Let the Lemon Pie Cobbler cool slightly before serving. Dust with powdered sugar if you like for an extra sweet finish.
