Lemon Pesto Rigatoni with Creamy Burrata & Toasted Pine Nuts
This Lemon Pesto Rigatoni with Burrata and Pine Nuts is the perfect Italian-inspired pasta dish that’s fresh, creamy, and bursting with flavor. Ingredients (Serves 2–3):
300 g (10.5 oz / 3 cups) rigatoni pasta
1/2 cup (120 ml) basil pesto (homemade or store-bought)
1 tsp (5 ml) fresh lemon zest
1 tbsp (15 ml) lemon juice
150 g (5.3 oz) burrata cheese
2 tbsp (15 g) pine nuts, toasted
1 tbsp (15 ml) extra virgin olive oil
Salt and black pepper, to taste
Fresh basil leaves, for garnish
Instructions:
Cook the pasta Bring a pot of salted water to a boil and cook rigatoni
until al dente (about 10–12 minutes). Reserve 1/4 cup (60 ml) of pasta water, then drain.
Toss with pesto & lemon In a large mixing bowl, combine the hot pasta with basil pesto, lemon zest, lemon juice, and a splash of reserved pasta
water. Season with salt and pepper.
Add creamy burrata Transfer pasta to serving plates and gently place burrata on top.
Finish & serve Drizzle with olive oil, sprinkle with toasted pine nuts, and garnish with fresh basil leaves.
Serve immediately while warm and creamy.
