Ingredients:

For the Roasted Garlic:

1 whole garlic bulb

1 tbsp olive oil

Pinch of salt

For the Spaghetti:

12 oz (340g) spaghetti

2 tbsp olive oil

2 tbsp unsalted butter

Zest & juice of 1 large lemon

1/4 tsp crushed red pepper flakes (optional)

1/4 cup chopped fresh basil

2 tbsp chopped fresh parsley

Salt & black pepper to taste

For Serving:

8 oz burrata cheese (about 2 balls)

Freshly grated Parmesan (optional)

Extra basil leaves for garnish

 

Instructions

1. Roast the Garlic:

Preheat oven to 400°F (200°C). Slice the top off the garlic bulb to expose the cloves. Drizzle with olive oil, sprinkle with salt, wrap in foil, and roast for 30–35 minutes until golden and soft. Cool slightly, then squeeze the roasted cloves into a bowl and mash into a creamy paste.

2. Cook the Pasta:

Bring a large pot of salted water to a boil. Cook the spaghetti until al dente according to package directions. Reserve 1 cup pasta water, then drain.

3. Make the Lemon Herb Sauce:

In a large skillet over medium heat, melt the butter with olive oil. Add the roasted garlic paste and lemon zest, stirring for 1 minute until fragrant. Pour in lemon juice, fresh basil, parsley, and red pepper flakes (if using). Add a splash of pasta water and stir to combine.

4. Toss & Coat:

Add the cooked spaghetti to the skillet, tossing until each strand is coated in the silky lemon herb garlic sauce. Add more pasta water if needed for creaminess. Season with salt and pepper to taste.

5. Plate & Serve:

Divide the pasta among bowls. Place a burrata ball on top of each portion and gently break it open so the creamy center melts into the pasta. Garnish with extra basil leaves and Parmesan if desired.
