Lemon Butter Pie
Ingredients:
• 1 1/2 cups graham cracker crumbs
• 1/2 cup unsalted butter, melted
• 1/4 cup granulated sugar
• 4 large eggs
• 1 cup granulated sugar
• 1/2 cup unsalted butter, softened
• 1/2 cup fresh lemon juice
• 1 tablespoon lemon zest
• 1/4 teaspoon salt
• 1 cup heavy cream
• Powdered sugar for dusting
Directions:
. Preheat your oven to 325°F (163°C).
. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into a pie dish to form the crust.
. In another bowl, beat eggs and sugar until light and fluffy.
. Add softened butter, lemon juice, lemon zest, and salt to the egg mixture. Mix well.
. Pour the lemon filling into the prepared crust.
. Bake for 30-35 minutes or until the center is set.
. Allow the pie to cool completely.
. Whip the heavy cream until stiff peaks form and spread it over the cooled pie.
