    Keto Creamy Lemon Squares

    Bright, tangy, and irresistibly creamy, these Keto Creamy Lemon Squares are the perfect guilt-free dessert for anyone following a low-carb or ketogenic diet. With a buttery almond flour crust and a smooth lemon custard filling, every bite delivers that sweet-tart balance you love without the sugar crash!

    Ingredients:

    For the Crust:
    1½ cups almond flour
    ¼ cup powdered erythritol (or monk fruit sweetener)
    ¼ cup melted butter
    ½ teaspoon vanilla extract
    Pinch of salt
    For the Lemon Filling:
    4 large eggs
    ¾ cup powdered erythritol
    ½ cup fresh lemon juice (about 3–4 lemons)
    1 tablespoon lemon zest
    ¼ cup heavy cream
    2 tablespoons coconut flour
    ¼ teaspoon baking powder

    Instructions:

     

    Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper for easy removal.

    In a bowl, mix almond flour, erythritol, melted butter, vanilla, and salt until a crumbly dough forms. Press evenly into the pan.
    Bake for 10–12 minutes or until golden. Let it cool slightly.

    In a large bowl, whisk together eggs, erythritol, lemon juice, zest, heavy cream, coconut flour, and baking powder until smooth.

    Pour the lemon filling over the crust and bake for 20–25 minutes, until the center is just set.

    Allow to cool completely, then refrigerate for at least 2 hours (or overnight) before slicing.

    Cut into squares and dust lightly with powdered erythritol for a bakery-style finish. Store leftovers in the fridge for up to 5 days.
