    Ingredients (Serves 4–6):

1 prime rib roast (4–5 lbs, bone-in or boneless)
    4 cloves garlic, minced
2 tbsp fresh rosemary, finely chopped
    2 tbsp fresh thyme, chopped
    2 tsp salt
1 tsp freshly cracked black pepper
    2 tbsp olive oil

    Directions:

Preheat oven to 450°F (230°C). Pat the prime rib dry and rub all over with olive oil, garlic, rosemary, thyme, salt, and black pepper.

Place the roast fat-side up in a roasting pan. Roast at 450°F for 15 minutes to create a flavorful, golden crust.

Reduce oven temperature to 325°F (165°C) and continue roasting for 1½–2 hours, or until the internal temperature reaches 130–135°F for medium-rare.

Remove from oven, tent loosely with foil, and rest for 15–20 minutes to lock in juices.

Slice thick and serve with au jus, horseradish sauce, roasted vegetables, or creamy mashed potatoes.
