This John Wayne Casserole is loaded with seasoned ground beef, fresh veggies, and a layer of creamy ranch sour cream, all topped with melted cheddar and Monterey Jack cheese. Perfect for a family dinner, this easy-to-make dish is the ultimate crowd-pleaser!
Ingredients:
1 lb ground beef
1 medium onion, chopped
1 medium bell pepper, chopped
1 (10 oz) can diced tomatoes with green chilies (like Rotel), drained
1 packet taco seasoning
1 (8 oz) can refrigerated biscuits
1 cup sour cream
1 cup mayonnaise
1 packet ranch dressing mix
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 (4 oz) can sliced jalapeños (optional)
Instructions:
1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Add chopped onion and bell pepper, cooking until softened. Stir in the taco seasoning and diced tomatoes with green chilies. Cook for another 3-5 minutes to combine flavors.
3. Spread the refrigerated biscuit dough on the bottom of the prepared baking dish. Pre-bake the biscuits for about 5 minutes until they start to puff.
4. Evenly spread the beef mixture over the partially baked biscuit crust.
5. In a bowl, mix together sour cream, mayonnaise, and the ranch dressing mix. Spread this creamy mixture over the beef.
6. Top with shredded cheddar cheese and Monterey Jack cheese, and add sliced jalapeños for a spicy kick if desired.
7. Bake for 25-30 minutes, or until the cheese is melted and bubbly, and the biscuit base is cooked through.
8. Let cool for a few minutes, then serve and enjoy!
