Ingredients:
2 pounds ground beef, cooked and drained
1 (1.25-oz) packet taco seasoning
4 oz sour cream
4 oz mayonnaise
8 oz cheddar cheese, shredded and divided
1 yellow onion, sliced
2 cups biscuit mix
2 tomatoes, sliced
1 green bell pepper, sliced
1 (4-oz) can sliced jalapeño peppers
Directions:
Preheat oven to 325°F (165°C). Brown the ground beef, drain excess fat, then add taco seasoning and water according to package instructions. Set aside.
In a bowl, mix sour cream, mayonnaise, 4 oz cheddar cheese, and half of the sliced onions until smooth.
Prepare the biscuit mix with water as directed on the package. Press the soft dough into the bottom and ½ inch up the sides of a greased 9×13-inch casserole dish.
Sauté remaining onions and green bell pepper until slightly tender.
