Ingredients

1 ½ pounds lean ground beef

2 cups diced onion

½ cup diced bell pepper

1 ounce taco seasoning (1 packet)

1 (10-ounce) can of diced tomatoes with green chilies (drained)

1 (8-ounce) can of refrigerated biscuit dough

1 (8-ounce) container of sour cream

1/2 cup mayonnaise

1 cup shredded cheddar cheese (divided)

1 cup shredded Monterey Jack cheese (divided)

1 (4-ounce) can of sliced jalapeños (optional, for topping)

Salt and pepper to taste

Instructions:

1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.

2. Cook the Ground Beef Mixture

In a large skillet over medium-high heat, cook the ground beef until no longer pink.

Add the diced onion and bell pepper, cooking until softened (about 5 minutes).

Stir in the taco seasoning and diced tomatoes with green chilies. Cook for an additional 2-3 minutes. Remove from heat.

3. Prepare the Biscuit Base

Open the biscuit dough and press it evenly into the bottom of the prepared baking dish to form a crust.

4. Mix the Sour Cream Topping

In a medium bowl, mix sour cream, mayonnaise, and half of the shredded cheeses (cheddar and Monterey Jack). Set aside.

5. Layer the Casserole

Spread the cooked ground beef mixture evenly over the biscuit crust.

Spread the sour cream mixture on top of the beef layer.

Sprinkle the remaining shredded cheeses evenly on top.
