    Jalapeño Popper Cheesy Chicken Enchiladas with Creamy Sauce

    If you’re a fan of jalapeño poppers and cheesy chicken enchiladas, this easy Mexican dinner recipe is the ultimate comfort food mashup! Loaded with creamy shredded chicken, spicy jalapeños, and gooey cheese, these baked enchiladas are topped with a rich and creamy enchilada sauce that brings everything together for a bold and flavorful meal.

     

    Ingredients:

    2 cups cooked shredded chicken (great for rotisserie leftovers)

    1 cup cream cheese, softened

    1 cup shredded cheddar cheese

    ½ cup diced jalapeños (use fresh for extra heat or pickled for tang)

    ½ tsp garlic powder

    ½ tsp onion powder

    ½ tsp ground cumin

    ¼ tsp salt

    ¼ tsp black pepper

    8 small flour tortillas

    1 cup enchilada sauce

    1 cup sour cream

    ½ cup shredded Monterey Jack cheese

    Chopped green onions for garnish

     

    Instructions:

    1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

    2. In a large bowl, mix the shredded chicken, cream cheese, cheddar cheese, jalapeños, and seasonings (garlic powder, onion powder, cumin, salt, and pepper) until creamy and well combined.

    3. Fill each tortilla with a generous scoop of the chicken mixture. Roll tightly and place seam-side down in the baking dish.

    4. In a separate bowl, whisk together the enchilada sauce and sour cream until smooth and creamy. Pour evenly over the enchiladas.

    5. Sprinkle with Monterey Jack cheese.

    6. Bake for 25–30 minutes until the cheese is bubbly and golden.

    7. Garnish with chopped green onions and serve warm.
