Fried Potatoes and Onions with Smoked Sausage
Ingredients:
– 1½ pounds russet potatoes, diced into 1/2″ cubes
– 1 pound smoked sausage, sliced
– 2 tablespoons olive oil
– ½ teaspoon seasoned salt
– ½ teaspoon Italian seasoning
– ½ large red bell pepper
– ½ large green bell pepper
– 1 small onion, diced
– Black pepper to taste
– Shredded Parmesan cheese, for garnish
Directions:
1. In a large pan, sauté the onion in a tablespoon of butter over medium heat until translucent and soft. Set aside.
2. In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil until melted. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper. Cover and simmer, turning occasionally, for 15 minutes or until the potatoes are somewhat softened.
3. Add the sliced sausage to the skillet and cook for an additional 10 minutes, stirring occasionally.
4. Meanwhile, sauté the bell peppers in a separate skillet until soft and crisp.
5. Once the potatoes and sausage are cooked, combine them with the sautéed onions and peppers.
6. Serve hot, garnished with shredded Parmesan cheese if desired. Enjoy your delicious meal!
