Ingredients:

For the Italian Pot Roast:

3 to 4 lbs chuck roast (ideal for slow cooking)

2 tbsp olive oil

1 onion, chopped

2 carrots, chopped

2 celery stalks, chopped

4 garlic cloves, minced

5 cups beef broth

1 tsp dried thyme

1 tsp dried rosemary

Salt and black pepper, to taste

For the Creamy Parmesan Risotto:

1 cup Arborio rice (traditional risotto rice)

4 cups chicken broth, kept warm

2 tbsp butter

½ cup freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

 

Instructions

1. Sear the Chuck Roast

Heat olive oil in a large Dutch oven over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until golden-brown to lock in juices.

2. Sauté the Aromatics

Remove the roast and set aside. In the same pot, sauté onions, carrots, celery, and garlic for about 5 minutes until softened.

3. Build the Braise

Add 5 cups of beef broth, thyme, and rosemary. Scrape the pot to deglaze. Return the roast to the pot, cover, and simmer on low heat for 3 to 4 hours—or until fork-tender.

4. Make the Parmesan Risotto

In a separate pan, keep the chicken broth warm. In another saucepan, melt butter, add Arborio rice, and stir for 1–2 minutes to lightly toast.

5. Cook Risotto Slowly

Add warm broth one ladle at a time, stirring constantly. Let the liquid absorb before adding more. Cook for 20–25 minutes until the risotto is creamy and al dente.

6. Finish with Cheese

Stir in Parmesan cheese and mix until smooth, creamy, and cheesy.
