    Ingredients:
    – 1 (15-ounce) can of whole or sliced beets
    – 1 small onion, finely chopped
    – 2 tablespoons apple cider vinegar
    – 1 tablespoon brown sugar
    – 1/2 teaspoon salt
    – 1/4 teaspoon freshly ground black pepper
    – 2 cloves of garlic, minced
    – 2 tablespoons unsalted butter
    – 1 teaspoon cornstarch (optional for thickening)
    – Fresh parsley, chopped (for garnish)

     

     

    Preparation:

    1. **Prep the Beets:**
    – Drain the beets, reserving 1/4 cup of the juice. If using whole beets, slice them into 1/4 inch pieces.

    2. Sauté Aromatics:
    – Melt butter in a saucepan over medium heat. Sauté the onion and garlic until translucent, about 3-4 minutes.

    3. Add Seasonings:
    – Mix in the brown sugar, apple cider vinegar, salt, and pepper until the sugar dissolves.

    4. Cook the Beets:

     

    – Add the beets and reserved juice to the pan. Simmer for 5 minutes to blend the flavors.

    5. Thicken the Sauce (Optional):
    – For a thicker sauce, mix the cornstarch with a small amount of water to form a slurry. Stir this into the beets and cook until the desired consistency is reached.

    6. Season and Garnish:
    – Adjust seasoning to taste. Garnish with fresh parsley for a burst of color and freshness.

    Variations & Tips:

    – Richness: Add a splash of cream or sour cream for extra richness.
    – Vinegar Substitute: Use red wine vinegar instead of apple cider vinegar for a different tangy twist.
    – Sweetness: Enhance sweetness by adding raisins to the beets.

     

    – Garlic: Adjust the amount of garlic to your taste, or use garlic powder for convenience.
    – Lower Sugar: Reduce or omit the brown sugar for a lower sugar version, balancing the flavor to your preference.
