Directions:

Prepare the Oven and Pan:
– Preheat the oven to 350°F (175°C).
– Spray a cupcake pan with non-stick spray.

Mix the Cookie Dough:
– In a bowl, whisk together flour, baking soda, cinnamon, cornstarch, and salt.
– In another bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla, mixing well.

– Form dough into balls and press into the cupcake cups, shaping the dough up the sides to form a cup.
