Immune-Boosting Penicillin Soup Recipe
A powerhouse healthy chicken soup loaded with garlic, turmeric, ginger, and fresh vegetables perfect for boosting immunity and soothing cold or flu symptoms. This homemade chicken broth soup is easy to make in an Instant Pot or on the stove and pairs beautifully with pasta for a comforting meal.
Ingredients:
4 × 32 oz boxes of chicken broth
2–4 cups water (start with 2 cups and add as needed)
2 bunches celery, chopped
6 whole carrots, peeled and chopped
12 cloves garlic, peeled
2 whole onions, peeled and quartered
1 bundle fresh thyme
2–3 tsp ginger paste (or fresh grated ginger)
~2 tbsp turmeric powder (anti-inflammatory powerhouse)
4 tbsp roasted chicken (for added protein and flavor)
Juice of 2–3 lemons (for vitamin C boost)
Acini di pepe pasta (optional, for serving)
Grated Parmesan or Romano cheese (optional garnish)
Instructions:
Cook the Veggies
Place chopped celery, carrots, garlic, onions, and a bundle of thyme in your Instant Pot. Cover with chicken broth.
Instant Pot: Cook 30 minutes on high pressure.
Stovetop option: Simmer until vegetables are tender.
Blend the Soup Base
Remove the vegetables from the broth. Blend them with the cooking liquid until smooth.
Combine and Season
Pour the blended mixture into a large pot with remaining broth and water.
Add ginger paste, turmeric, roasted chicken, and lemon juice. Heat gently to a simmer.
Serve with Pasta
Serve over acini di pepe or your favorite small pasta. Keep pasta and broth separate to prevent sogginess and combine when eating.
