Hungarian Mushroom Soup
A warm, earthy, and creamy mushroom soup loaded with rich paprika flavor perfect for cozy nights and immune-boosting nourishment.
Ingredients:
2 tbsp olive oil
1 large yellow onion, finely chopped
2 lbs cremini mushrooms, sliced
4 cloves garlic, minced
1 tsp sweet paprika
½ tsp smoked paprika
¼ tsp cayenne pepper (optional, for heat)
6 cups vegetable or chicken broth
1 cup sour cream
2 tbsp all-purpose flour
1 tbsp lemon juice
Salt & black pepper, to taste
2 tbsp fresh parsley, chopped (for garnish)
Instructions:
Heat olive oil in a large pot or Dutch oven over medium heat. Add the onions and cook for 8–10 minutes until soft and translucent.
Add sliced cremini mushrooms and cook for 12–15 minutes until they release moisture and develop a golden-brown color. Work in batches if needed.
Stir in minced garlic, sweet paprika, smoked paprika, and optional cayenne pepper. Cook 1 minute until fragrant.
Pour in the broth, bring to a boil, reduce heat, and let simmer for 20 minutes to blend flavors.
In a small bowl, whisk sour cream and flour until smooth. Slowly whisk into the pot to avoid lumps. Simmer 5 more minutes until slightly thickened.
Remove from heat and stir in lemon juice. Add salt and pepper to taste.
Ladle into bowls and top with fresh parsley.
