3 medium carrots, sliced into rounds
3 celery stalks, chopped
4 garlic cloves, minced
8 cups low-sodium chicken broth (or vegetable broth for a vegetarian version)
1 whole chicken breast, bone-in and skin-on (about 1 pound)
2 bay leaves
1 cup small pasta (such as ditalini, orzo, or small shells)
Seasonings & Aromatics:
1 teaspoon dried oregano
½ teaspoon dried thyme
¼ teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
2 tablespoons fresh lemon juice
¼ cup fresh parsley, chopped

Instructions:

In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for 5–7 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.

Pour in the chicken broth and add the whole chicken breast and bay leaves. Bring to a boil, then reduce to a simmer. Cover and cook for 25–30 minutes until the chicken is tender and cooked through.

Remove the chicken and set aside to cool slightly. Add the pasta to the simmering soup and cook until al dente, following package directions.

Shred the chicken into bite-sized pieces, discarding the skin and bones. Return the shredded meat to the pot.

Stir in oregano, thyme, red pepper flakes (if desired), salt, and pepper. Add fresh lemon juice and chopped parsley for brightness.
