    Add the chopped onion and garlic and sauté for 2–3 minutes until soft and fragrant.

    2. Add the Vegetables
    Stir in the carrots, celery, and sweet potato. Cook for about 5 minutes, allowing the vegetables to slightly soften and release their natural sweetness.

    3. Build the Stew
    Add the diced tomatoes (with juices), vegetable broth, chickpeas, and green beans.
    Season with oregano and thyme, stirring well to combine all ingredients.

    4. Simmer
    Bring the stew to a gentle boil, then reduce heat to low.
