Ingredients:
– 3-4 lbs beef chuck roast
– 1 tbsp olive oil
– 2 cups beef broth
– 1 cup water
– 1 onion, chopped
– 4 cloves garlic, minced
– 4 large carrots, cut into chunks
– 3 potatoes, cut into chunks
– 2 sprigs fresh rosemary
– 2 sprigs fresh thyme
– Salt and pepper to taste
Instructions:
1. Preheat your oven to 300°F (150°C).
2. In a large, oven-safe pot, heat the olive oil over medium-high heat. Sear the beef chuck roast on all sides until browned.
3. Set the roast aside. In the same pot, sauté the chopped onion and minced garlic until aromatic.
4. Add the beef broth and water, scraping the pot to release all the flavorful bits stuck to the bottom.
5. Place the roast back into the pot. Add the carrot chunks, potato chunks, rosemary, and thyme.
