    Hearty Stovetop Taco Soup Recipe

    Looking for a quick and flavorful weeknight dinner? This Stovetop Taco Soup is loaded with ground beef (or turkey), beans, corn, tomatoes, and taco spices all simmered together in one pot for the ultimate comfort food with a Mexican twist. Perfect for busy nights, family meals, or even game day gatherings!

     

    Ingredients:

    1 pound ground beef (or ground turkey for a lighter version)

    1 medium onion, chopped

    2 cloves garlic, minced

    1 can (15 oz) black beans, drained and rinsed

    1 can (15 oz) kidney beans, drained and rinsed

    1 can (15 oz) corn kernels, drained

    1 can (14.5 oz) diced tomatoes with green chilies

    1 packet taco seasoning (homemade or store-bought)

    4 cups beef broth (or vegetable broth for vegetarian option)

    Salt and black pepper, to taste

    Optional Taco Soup Toppings:

    Shredded cheddar or Mexican blend cheese
    Fresh avocado slices
    Sour cream
    Chopped cilantro
    Crunchy tortilla chips

     

    Directions:

    1. In a large soup pot, cook the ground beef (or turkey) over medium heat until browned, breaking it apart with a spoon. Drain excess fat if necessary.

    2. Add chopped onion and minced garlic. Cook for 3–4 minutes until softened and fragrant.

    3. Stir in black beans, kidney beans, corn, diced tomatoes with green chilies, and taco seasoning. Mix well to combine.

    4. Pour in beef broth and bring to a gentle boil. Reduce heat and let simmer for 20–25 minutes, allowing flavors to meld together.

    5. Season with salt and pepper to taste.

     

    Serve hot with your favorite toppings like shredded cheese, avocado, sour cream, cilantro, or tortilla chips for the perfect Tex-Mex soup experience.
