    Hearty Homestead Mulligan Stew

     

    Hearty Homestead Mulligan Stew is the ultimate comfort food, combining tender beef, fresh vegetables, and savory herbs in a rich, flavorful broth. This one-pot meal is easy to prepare, making it perfect for busy weeknights or cozy weekends. Packed with protein and nutrients, it’s a wholesome choice for the whole family. The addition of frozen peas and corn adds a touch of sweetness and color. Serve it with crusty bread for a hearty, satisfying dinner!

    Ingredients

    2 tablespoons olive oil

    1 lb beef stew meat, cut into cubes

    Salt and pepper to taste

    1 large onion, chopped

    2 cloves garlic, minced

    3 carrots, peeled and sliced

    3 potatoes, peeled and cubed

    4 cups beef broth

    1 can (14.5 oz) diced tomatoes, undrained

    1 teaspoon dried thyme

    1 bay leaf

    1 cup frozen peas

    1 cup frozen corn

    2 tablespoons fresh parsley, chopped

    Instructions

    1. Sear the Beef:
    Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, and brown on all sides. Remove and set aside.

    2. Sauté the Aromatics:
    In the same pot, cook the onion and garlic until softened, about 5 minutes.

    3. Combine Ingredients:
    Return the beef to the pot. Add carrots, potatoes, beef broth, diced tomatoes with their juice, thyme, and bay leaf. Stir well, bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours, or until the beef is fork-tender.

    4. Add the Final Touches:
    Stir in the frozen peas and corn. Cook for another 10 minutes. Remove the bay leaf and adjust seasoning with salt and pepper.

    5. Serve and Garnish:
    Sprinkle fresh parsley on top and serve hot with crusty bread or over rice.

    Prep Time: 20 minutes

    Cook Time: 1 hour 50 minutes

    Total Time: 2 hours 10 minutes
