    Hearty Crockpot Italian Chicken Soup

     

    Looking for an easy, healthy, and comforting slow cooker recipe? This Crockpot Italian Chicken Soup is packed with tender shredded chicken, hearty vegetables, Italian herbs, and protein-rich white beans. Perfect for chilly nights, meal prep, or a nourishing family dinner, this soup is a delicious one-pot wonder!

    Ingredients:

    1 lb boneless, skinless chicken breasts

    1 small onion, diced

    2 cloves garlic, minced

    1 can (14.5 oz) diced tomatoes, undrained

    1 can (15 oz) white beans (like cannellini or great northern), drained and rinsed

    1 carton (32 oz) low-sodium chicken broth

    1 teaspoon salt

    1/2 teaspoon black pepper

    1 teaspoon dried oregano

    1 teaspoon dried basil

    1/2 teaspoon dried thyme

    2 medium carrots, peeled and sliced

    1 medium zucchini, halved and sliced

    1/2 cup small pasta (such as ditalini or orzo)

    2 cups fresh baby spinach

    Instructions:

    1. Layer the crockpot: Place chicken breasts at the bottom of the slow cooker. Add diced onion, garlic, tomatoes, white beans, chicken broth, salt, pepper, oregano, basil, and thyme.

    2. Cook low and slow: Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours until the chicken is fully cooked.

    3. Shred chicken: Remove chicken, shred with two forks, then return to the crockpot.

    4. Add veggies and pasta: Stir in sliced carrots, zucchini, and pasta. Turn heat to HIGH and cook for an additional 20–30 minutes until pasta is tender.

    5. Finish with spinach: Add fresh spinach and stir until wilted. Adjust seasoning if needed.

    6. Serve and enjoy: Ladle hot soup into bowls and top with grated Parmesan and fresh basil for a flavorful finish.
