Hearty Crock Pot Lasagna Soup

Warm, cheesy, and packed with Italian flavor, this Crock Pot Lasagna Soup is everything you love about traditional lasagna without the layering! Made with tender pasta, rich tomato broth, ground beef, and gooey cheese, it’s the perfect slow cooker meal for the whole family.

Ingredients:

1 lb ground beef

½ onion, diced

1 red bell pepper, diced

1 (14.5 oz) can petite diced tomatoes

1 (28 oz) can crushed tomatoes

1 tsp minced garlic

1 tbsp Italian seasoning

4 cups beef broth (1 carton)

12 oz lasagna noodles, broken into pieces

½ cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup shredded Parmesan cheese

Instructions:

  1. Brown the Beef:
    In a skillet over medium-high heat, cook ground beef until browned and no longer pink. Drain any excess fat.
  2. Slow Cook It All:
    Add cooked beef to a 6-quart crock pot. Stir in diced onion, red bell pepper, petite diced tomatoes, crushed tomatoes, garlic, Italian seasoning, and beef broth.
  3. Set It & Forget It:
    Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours perfect for busy days!
  4. Add the Pasta:
    Break lasagna noodles into bite-sized pieces and stir into the soup. Cover and cook on HIGH for 30-45 minutes or until noodles are tender.
  5. Serve with Cheese:
    Ladle the lasagna soup into bowls and top each serving with a spoonful of ricotta cheese and a generous sprinkle of mozzarella and Parmesan cheese.

Servings: 6-8

Tip:

Make it extra creamy by stirring in a dollop of ricotta just before serving. You can also swap beef for ground turkey or Italian sausage for a twist!
