Hearty Cabbage and Beef Soup

Ingredients:
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken broth
4 cups cabbage, chopped
2 large potatoes, peeled & diced
1 carrot, peeled & sliced
1 teaspoon dried thyme
Salt & pepper, to taste
2 tablespoons olive oil
1 tablespoon tomato paste
1 bay leaf
Directions:
In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it into small pieces. Drain excess fat if needed.
Add the onion and garlic; sauté for 3–4 minutes until softened.
Stir in the tomato paste, dried thyme, and bay leaf; cook for 2 minutes to deepen the flavor.
Pour in the chicken broth and bring to a simmer. Add cabbage, potatoes, and carrot. Mix well.
Season with salt and pepper. Simmer for 30–40 minutes, or until vegetables are tender and flavors have developed.
Remove the bay leaf and serve warm.
