    Ingredients:

    1 large broccoli, cut into florets

    2 tbsp olive oil (healthy fats for weight loss)

    A handful of baby kale (fiber + vitamins)

    1 small onion, diced

    7 small garlic cloves, minced (boosts metabolism)

    12 small cherry or grape tomatoes, halved

    1 medium zucchini, diced

    1 red bell pepper, chopped

    1 cup low-fat shredded mozzarella cheese

    2 tbsp grated Parmesan cheese

    1 tsp dried oregano

    1 tsp dried basil

    ½ tsp smoked paprika (optional)

    Salt & pepper, to taste

    Non-stick cooking spray

    Instructions:

    Preheat oven to 375°F (190°C) and coat a baking dish with non-stick spray.
    Sauté onions and garlic in olive oil until fragrant.
    Combine broccoli, zucchini, bell pepper, tomatoes, and kale in a large bowl.
    Season with oregano, basil, paprika, salt, and pepper. Mix well.
    Layer veggies in the dish and sprinkle with mozzarella and Parmesan.
    Bake for 20-25 minutes or until veggies are tender and cheese is melted.
