    Healthy Chickpea, Beetroot & Feta Salad with Lemon-Garlic Vinaigrette

    Looking for a refreshing and nutritious beetroot salad recipe? This Mediterranean-inspired chickpea salad combines earthy beets, creamy feta cheese, and protein-packed chickpeas, all tossed in a zesty lemon-garlic vinaigrette. It’s the ultimate healthy salad recipe perfect for meal prep, lunch, or a vibrant side dish!

     

    Ingredients:

    1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed

    2 medium cooked beets (beetroot), peeled and diced

    ½ cup crumbled feta cheese

    ¼ cup extra virgin olive oil

    Juice of 1 large lemon

    2 cloves garlic, finely minced

    Salt and freshly ground black pepper, to taste

    2 tablespoons fresh parsley, chopped (optional, for garnish)

     

    Instructions:

    1. Prepare the Dressing:
    In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, and minced garlic. Season with salt and black pepper to taste.

    2. Assemble the Salad:
    In a large mixing bowl, combine the chickpeas, diced beets, and feta cheese.

    3. Toss & Serve:
    Pour the lemon-garlic vinaigrette over the salad and toss gently to coat all the ingredients.

    4. Garnish:
    Sprinkle with fresh parsley, if desired, and serve immediately or chill for later.
