    Ingredients:

    1 pound (450g) ground beef

    2 tablespoons olive oil

    1 red bell pepper, diced

    1 green bell pepper, diced

    1 yellow bell pepper (optional for extra color), diced

    1 medium onion, finely chopped

    2 cloves garlic, minced

    1 teaspoon smoked paprika

    1 teaspoon ground cumin

    1/2 teaspoon chili powder (optional for heat)

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    1/4 cup tomato sauce or diced tomatoes

    1/4 cup beef broth

    Optional toppings: shredded cheese, sour cream, fresh cilantro

    For Serving:

    Cooked rice, quinoa, or mashed potatoes

    Directions:

    1. Cook the Ground Beef:
    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Remove the beef, drain any excess grease, and set it aside.

    2. Sauté the Vegetables:
    In the same skillet, add the remaining tablespoon of olive oil. Toss in the diced red, green, and yellow bell peppers along with the onion. Sauté for 5-7 minutes until tender and slightly caramelized.

    3. Add Garlic and Spices:
    Stir in the minced garlic, smoked paprika, ground cumin, chili powder (if desired), salt, and black pepper. Cook for 1-2 minutes, allowing the spices to bloom.

    4. Combine Beef and Sauce:
    Return the cooked ground beef to the skillet. Mix in the tomato sauce and beef broth. Simmer the mixture for about 5 minutes, letting the flavors meld beautifully.

    5. Serve and Enjoy:
    Spoon the beef and peppers mixture over rice, quinoa, or mashed potatoes. Garnish with shredded cheese, a dollop of sour cream, or fresh cilantro for added flair.
