Ingredients:
3 medium zucchini, thinly sliced lengthwise
2 tbsp (30 ml) olive oil
Salt & black pepper, to taste
1 cup (150 g) crumbled feta cheese
½ cup (70 g) chopped olives (Kalamata or green)
1 cup (150 g) cherry tomatoes, quartered
1 tbsp (15 ml) lemon juice
1 tbsp (15 ml) olive oil (extra for filling)
1 tbsp fresh parsley or basil, finely chopped
Instructions:
Brush zucchini slices with olive oil and season with salt and pepper.
Heat a grill or grill pan over medium-high heat.
Grill each slice for 2–3 minutes per side until soft, flexible, and lightly charred.
Let cool slightly before rolling.
In a bowl, combine the feta cheese, chopped olives, cherry tomatoes, lemon juice, olive oil, and herbs. Mix until well combined.
Place a spoonful of the filling at one end of each zucchini slice. Roll tightly and secure with a toothpick if needed.
Arrange on a platter and drizzle with a bit of olive oil before serving.
