Grilled Zucchini Roll-Ups with Lemon Basil Ricotta
These Grilled Zucchini Roll-Ups are the perfect healthy appetizer or side dish. Fresh zucchini slices are grilled to perfection, then stuffed with a creamy lemon-basil ricotta filling and sweet, slow-roasted cherry tomatoes. Light, flavorful, and elegant this dish is perfect for summer parties, family dinners, or a healthy snack.
Ingredients:
For the Grilled Zucchini:
2 medium zucchinis, sliced lengthwise into thin strips
2 tbsp olive oil
Salt & black pepper, to taste
For the Lemon-Basil Ricotta Filling:
1 cup (250 g) ricotta cheese
Zest of 1 lemon
1 tbsp lemon juice
2 tbsp fresh basil, finely chopped
Salt & black pepper, to taste
For the Slow-Roasted Tomatoes:
1 cup (150 g) cherry tomatoes, halved
1 tbsp olive oil
½ tsp dried oregano
Pinch of salt & pepper
Directions:
Preheat oven to 300°F (150°C).
Toss cherry tomatoes with olive oil, oregano, salt, and pepper.
Spread on a baking sheet and roast for 40–50 minutes until soft and caramelized.
In a bowl, mix ricotta cheese, lemon zest, lemon juice, basil, salt, and pepper until smooth and creamy.
Brush zucchini slices with olive oil and season with salt and pepper.
Grill over medium-high heat for 2–3 minutes per side until tender with grill marks.
Place a spoonful of ricotta mixture and a roasted tomato on one end of each zucchini slice.
Roll up tightly and secure with a toothpick if needed.
Arrange on a platter, drizzle with extra olive oil or lemon juice, and serve warm or at room temperature.
