A rich and comforting gnocchi recipe featuring pillowy pasta tossed in a creamy spinach and feta sauce. Perfect for a quick weeknight dinner or an indulgent vegetarian meal that’s ready in just 20 minutes.

Ingredients:

1 pound gnocchi (potato gnocchi or store-bought packaged gnocchi)
10 ounces fresh spinach, roughly chopped
4 ounces feta cheese, crumbled
½ cup heavy cream
¼ cup grated Parmesan cheese
2 tablespoons butter
2 cloves garlic, minced
Salt and black pepper, to taste
¼ cup fresh parsley, chopped (optional garnish)

Instructions:

Boil in salted water according to package directions until tender. Drain and set aside.

In a large skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.

Stir in chopped spinach and cook for 2–3 minutes until wilted.

Pour in heavy cream, bring to a gentle simmer, and cook for 2–3 minutes to slightly thicken.

Mix in crumbled feta and Parmesan until smooth and creamy. Season with salt and pepper.

Toss the cooked gnocchi in the creamy spinach and feta sauce until evenly coated.

Garnish with parsley and enjoy warm!
