    This Grilled Chicken Scallops with Lemon Sauce recipe is a light yet flavorful dish that’s perfect for any occasion!     Ingredients:

    4 chicken scallops

    3 tablespoons olive oil, divided

    2 garlic cloves, minced

    Juice of 2 lemons

    Zest of 1 lemon

    1 tablespoon Dijon mustard

    1 tablespoon honey

    Salt and pepper, to taste

    1 tablespoon fresh parsley, chopped

    Instructions:

    1. Prepare the Chicken: Heat a skillet over medium heat and add 2 tablespoons of olive oil. Season the chicken scallops with salt and pepper.

    2. Cook the Chicken: Place the chicken in the skillet and brown each side for about 4-5 minutes until fully cooked.

    3. Make the Lemon Sauce: In a bowl, combine the lemon juice, lemon zest, minced garlic, Dijon mustard, honey, and the remaining olive oil. Stir well to mix the ingredients.

    4. Simmer the Sauce: Once the chicken scallops are cooked, remove them from the skillet and set aside. Pour the lemon sauce mixture into the skillet and let it simmer for about 2 minutes, stirring frequently.

    5. Combine and Serve: Return the chicken scallops to the skillet, coat them well in the lemon sauce, and let cook for another minute.

    6. Garnish and Serve: Serve hot, garnished with fresh chopped parsley.
