    Green Chile Cheese Baked Pasta (Creamy, Comforting & Flavor-Packed)

    This Green Chile Cheese Baked Pasta is creamy, cheesy, and full of bold flavor. Made with green chiles and melted cheese, it’s a comforting, family-friendly dinner perfect for busy weeknights.

    Ingredients:

    • 12 oz penne or rigatoni pasta (great for holding creamy sauce)
    • 2 tablespoons butter
    • 2 tablespoons all-purpose flour
    • 2 cups milk (whole or 2%)
    • 1 ½ cups shredded cheddar cheese (rich, sharp flavor)
    • 1 cup shredded Monterey Jack or mozzarella cheese (melts smoothly)
    • 1 teaspoon garlic powder
    • Salt and pepper, to taste
    • ½ teaspoon cumin (optional, adds warm depth)
    • 1 cup roasted green chiles (Hatch or Anaheim), chopped
    • ½ cup chopped tomatoes or red bell pepper (optional, adds freshness)
    • ½ cup cooked chicken, turkey, or plant-based protein (optional)

    Instructions:

    1. Preheat the Oven

    Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or large casserole dish.

    2. Cook the Pasta

    Cook pasta according to package instructions until al dente. Drain and set aside.

    3. Make the Creamy Cheese Sauce

    In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute to remove the raw flour taste.
    Slowly add milk while whisking until smooth and slightly thickened (about 4–5 minutes).
    Stir in garlic powder, cumin (if using), salt, and pepper.
    Lower heat and gradually add cheeses, stirring until fully melted and creamy.

    4. Assemble the Casserole

    In a large bowl, combine cooked pasta, cheese sauce, green chiles, tomatoes or bell pepper, and optional protein.
    Transfer to the prepared baking dish. Top with extra cheese and green chiles if desired.

    5. Bake

    Bake for 20–25 minutes, until bubbly and lightly golden on top.
    Let rest for 5 minutes before serving.
