    Greek Spaghetti Salad with Fresh Tomatoes and Feta

     

    This Greek Spaghetti Salad is a refreshing twist on pasta salad, combining the flavors of the Mediterranean with vibrant cherry tomatoes, crunchy cucumber, and tangy Kalamata olives. Tossed with crumbled feta cheese, fresh basil, and parsley, this salad is packed with freshness in every bite. The homemade olive oil and lemon dressing adds a perfect zesty finish. Serve it chilled for a light, healthy meal ideal for warm days. Perfect for picnics, potlucks, or a delicious side dish!

    Ingredients

    12 oz spaghetti

    1 pint cherry tomatoes, halved

    1 cucumber, diced

    1 red bell pepper, diced

    1 yellow bell pepper, diced

    1/2 red onion, thinly sliced

    1/2 cup Kalamata olives, pitted and halved

    1/2 cup crumbled feta cheese

    1/4 cup chopped fresh parsley

    1/4 cup chopped fresh basil

    1/4 cup extra-virgin olive oil

    3 tbsp lemon juice

    2 cloves garlic, minced

    1 tsp dried oregano

    1/2 tsp salt

    1/4 tsp black pepper

    1/4 tsp crushed red pepper flakes (optional)

    Instructions

    1. Cook the Spaghetti: Prepare spaghetti according to package directions. Drain and rinse under cold water until cool. Set aside.

    2. Combine the Veggies: In a large mixing bowl, add cherry tomatoes, cucumber, red and yellow bell peppers, red onion, Kalamata olives, feta cheese, parsley, and basil.

    3. Add the Spaghetti: Once cooled, add spaghetti to the bowl and gently toss everything together.

    4. Make the Dressing: In a small bowl, whisk olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and optional crushed red pepper flakes.

    5. Dress the Salad: Pour the dressing over the spaghetti and vegetable mixture, tossing until evenly coated.

    6. Chill and Serve: Let the salad chill in the refrigerator for at least an hour to meld flavors. Serve cold and enjoy this refreshing Greek-inspired pasta salad!
