    Greek Potato Salad Recipe with a Mediterranean Twist!

    This Greek Potato Salad is a vibrant and refreshing twist on a classic, bursting with Mediterranean flavors. The combination of tender potatoes, tangy Kalamata olives, and fresh herbs creates a delicious harmony that’s perfect for summer gatherings. A zesty dressing of extra virgin olive oil, Dijon mustard, and seasonings ties everything together. The optional feta cheese adds a creamy, salty finish, making this dish a true crowd-pleaser. Enjoy it as a side or a light main course!

    Ingredients:

    – 1 kg potatoes, peeled and cubed
    – 1/2 red onion, thinly sliced
    – 1/2 cup Kalamata olives, pitted and sliced
    – 1/2 cup cherry tomatoes, halved
    – 1 cucumber, seeded and diced
    – 1/4 cup fresh parsley, chopped
    – 1/4 cup fresh dill, chopped
    – 1/3 cup extra virgin olive oil
    – 1 teaspoon Dijon mustard
    – Salt and pepper to taste
    – 100 g feta cheese, crumbled (optional)

    Instructions:

    1. Start by boiling the cubed potatoes until tender. Drain and let them cool to room temperature.

    2. In a large mixing bowl, combine the cooled potatoes with red onion, Kalamata olives, cherry tomatoes, cucumber, parsley, and dill.

    3. In a small bowl, whisk together the extra virgin olive oil, Dijon mustard, salt, and pepper to create a zesty Greek dressing.

    4. Pour the dressing over the potato mixture and gently toss to coat all ingredients evenly.

    5. If desired, sprinkle the crumbled feta cheese on top for an extra burst of flavor.

    6. Serve your Greek Potato Salad chilled or at room temperature for a refreshing Mediterranean-inspired dish!
