    Golden-Baked Spinach, Mozzarella & Feta Egg Casserole Slice

    This golden-baked spinach, mozzarella, and feta egg casserole is a nutritious, protein-rich breakfast or brunch recipe packed with flavor and wholesome ingredients. Perfect for low-carb diets, healthy meal prep, vegetarian meals, and anyone looking for a quick, delicious, and nutrient-dense casserole.

    Ingredients:

    8 large eggs
    2 cups fresh spinach, chopped
    1 cup shredded mozzarella cheese
    1/2 cup crumbled feta cheese
    1/2 cup milk
    1 small onion, finely diced
    2 garlic cloves, minced
    1 tbsp olive oil
    1/2 tsp dried oregano
    1/2 tsp salt
    1/4 tsp black pepper
    Butter or oil for greasing the baking dish

    Directions:

    Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish.
    In a skillet over medium heat, warm olive oil. Sauté the onion and garlic for 2–3 minutes until fragrant.
    Add the chopped spinach and cook until wilted, about 1–2 minutes. Remove from heat to cool slightly.
    In a large bowl, whisk together the eggs, milk, oregano, salt, and pepper.
    Fold in the mozzarella, feta, and the cooked spinach mixture until everything is well combined.
    Pour the mixture into your prepared dish and spread evenly.
    Bake for 30–35 minutes, or until the top is golden and the center is set.
    Allow to cool for 10 minutes before slicing into squares.
    Serve warm and enjoy your fluffy, cheesy egg casserole!
