    Garlic Shrimp Stir-Fry with Asparagus & Mushrooms

    A quick, healthy, and flavorful stir-fry that brings together succulent shrimp, fresh asparagus, and earthy mushrooms in a savory garlic soy glaze. Perfect for busy weeknights, this low-carb, protein-rich meal is ready in just 20 minutes offering a satisfying, nutritious dish without the fuss!

    – 300g shrimp (peeled & deveined)
    – 1 bunch asparagus, trimmed & cut into 2-inch pieces
    – 1 cup mushrooms, sliced (button or cremini)
    – 2 garlic cloves, minced
    – 2 tbsp soy sauce (or tamari for gluten-free)
    – 1 tbsp olive oil or sesame oil
    – ½ tsp black pepper
    – Optional: chili flakes or a splash of lemon juice

     

    Directions:

    1. Sauté the Vegetables
    Heat oil in a large skillet over medium-high heat. Add mushrooms and cook 3–4 minutes until golden. Add asparagus and cook another 3–4 minutes until crisp-tender.

    2. Cook the Shrimp
    Push veggies to the side. Add shrimp and garlic to the pan. Cook 2–3 minutes per side until shrimp turns pink and opaque.

    3. Add Sauce & Toss
    Pour in soy sauce (or tamari), season with black pepper, and toss everything to coat evenly. Add chili flakes or lemon juice if desired.

    4. Serve & Enjoy
    Serve hot as-is for a low-carb dinner, or pair with rice, quinoa, or cauliflower rice for a satisfying, balanced meal.
