    Garlic Parmesan Chicken Meatloaf Recipe

     

    This Garlic Parmesan Chicken Meatloaf is the perfect comfort food, combining the rich flavors of chicken, garlic, and Parmesan cheese. It’s a simple and quick recipe ideal for busy weeknights, providing a delicious and nutritious meal. The sweet and savory glaze made with ketchup, Worcestershire sauce, and honey adds the perfect finishing touch. You can easily customize it by adding veggies like zucchini or spinach for added nutrients. Serve with mashed potatoes or a fresh salad for a well-rounded family dinner!

    Ingredients (Serves 4-6)
    For the Meatloaf:

    500g minced chicken meat

    1/2 cup (50g) breadcrumbs (or panko)

    1/3 cup (30g) grated Parmesan cheese

    1 egg, beaten

    2 cloves garlic, finely chopped

    1 onion, finely chopped or grated

    2 tbsp fresh parsley, chopped

    1 tsp salt

    1/2 tsp ground black pepper

    1/2 tsp sweet paprika (optional)

    For the Glaze:

    1/3 cup (80ml) ketchup

    1 tbsp Worcestershire sauce (optional)

    1 tbsp honey

    Preparation:

    1. Make the Meatloaf Mixture:
    Preheat your oven to 180°C (350°F).
    In a large bowl, combine minced chicken, breadcrumbs, Parmesan, egg, garlic, onion, parsley, salt, pepper, and paprika. Mix thoroughly using your hands or a spatula until well incorporated.

    2. Shape the Meatloaf:
    Line a loaf pan with parchment paper or lightly grease it.
    Press the mixture into the pan, shaping it evenly.

    3. Prepare the Glaze:
    In a small bowl, whisk together ketchup, Worcestershire sauce, and honey. Spread the glaze evenly over the meatloaf.

    4. Bake:
    Place the meatloaf in the preheated oven and bake for 40-45 minutes, or until the internal temperature reaches 75°C (165°F). For a caramelized glaze, broil for 2-3 minutes, watching closely to prevent burning.

    5. Rest and Serve:
    Let the meatloaf rest for 5-10 minutes before slicing.
    Serve warm with mashed potatoes, steamed vegetables, or a crisp green salad.

    Add grated zucchini or chopped spinach for extra nutrients.

    Swap regular breadcrumbs for gluten-free breadcrumbs or oats for a gluten-free option.
