A juicy, protein-packed twist on classic meatloaf that’s loaded with garlic, Parmesan, and irresistible cheesy flavor! This easy weeknight dinner recipe is the perfect comfort meal healthy, flavorful, and family-friendly.

Ingredients:

For the Meatloaf:
1 lb (450 g) ground chicken
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (panko or plain)
1 large egg, beaten
2 cloves garlic, minced
1/4 cup milk
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
For the Cheesy Garlic Topping:
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella
2 tbsp melted butter
1 clove garlic, minced
1 tbsp chopped parsley (optional)

Instructions:

Preheat oven to 375°F (190°C) and line a loaf pan or baking sheet with parchment.

Combine ground chicken, Parmesan, breadcrumbs, egg, garlic, milk, Italian seasoning, salt, and pepper. Mix gently overmixing makes meatloaf dense.

Form into a loaf or press into a pan. Bake 30 minutes.

Mix butter, garlic, Parmesan, and mozzarella.

After 30 minutes, spread the topping evenly over the meatloaf.

Bake an additional 15–20 minutes, until golden and bubbly and internal temp reaches 165°F (74°C).

Let rest 5 minutes. Garnish with parsley and serve with roasted veggies, salad, or mashed potatoes.
