Garlic Parmesan Chicken Meatloaf

Ingredients:
1 ½ lbs ground chicken
¾ cup seasoned breadcrumbs
½ cup grated Parmesan cheese
2 large eggs
4 cloves garlic, minced
½ yellow onion, finely chopped
¼ cup milk
2 tbsp fresh parsley, chopped
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
¼ cup shredded mozzarella cheese (optional topping)
1 tbsp olive oil (for brushing)
Instructions:
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan, eggs, garlic, onion, milk, parsley, Italian seasoning, salt, and pepper.
3. Form the mixture into a loaf shape and place it on the prepared baking sheet.
4. Brush the top with olive oil for a crispy, golden crust.
5. Bake for 45–50 minutes, or until the center reaches 165°F and the edges are nicely browned.
6. In the last 10 minutes of baking, sprinkle mozzarella cheese on top if using.
7. Let the meatloaf rest for 5–10 minutes before slicing.
