Garlic Herb Grilled Giant Prawns

Ingredients:
8 giant prawns, shells on, split open lengthwise
3 tbsp olive oil
4 tbsp unsalted butter, melted
4 cloves garlic, minced
1 tbsp fresh lemon juice
1 tsp lemon zest
2 tbsp fresh parsley, finely chopped
1 tsp dried Italian herbs (or oregano/thyme mix)
Salt and freshly ground black pepper, to taste
Lemon wedges, for serving
Instructions:
Rinse the prawns under cold water and pat dry with paper towels.
Using a sharp knife, split each prawn open along the back without removing the shell completely. Remove the vein for clean, tender prawns.
In a small bowl, whisk together melted butter, olive oil, minced garlic, lemon juice, lemon zest, fresh parsley, Italian herbs, salt, and black pepper.
This garlic herb butter will infuse the prawns with a rich, zesty flavor.
Preheat your grill or grill pan to medium-high heat.
