    Garlic Butter Chicken Meatloaf

     

    Garlic Butter Chicken Meatloaf

     

    This Garlic Butter Chicken Meatloaf is tender, juicy, and packed with flavor! Made with ground chicken, Parmesan, and Italian seasoning, then topped with a rich garlic butter glaze it’s the perfect weeknight dinner.

    Ingredients

    For the Meatloaf:

    1½ lbs ground chicken lean and juicy

    ½ cup breadcrumbs (panko preferred) for the perfect texture

    ½ cup grated Parmesan cheese adds a rich, savory taste

    1 large egg binds everything together

    3 garlic cloves, minced bold, garlicky flavor

    1 tsp dried Italian seasoning for that classic Italian touch

    ½ tsp salt enhances flavor

    ½ tsp black pepper a touch of heat

    2 tbsp fresh parsley, chopped for a fresh burst of flavor

    2 tbsp olive oil helps keep the meatloaf moist

    ½ cup shredded mozzarella cheese (optional) for a melty topping

    For the Garlic Butter Glaze:

    3 tbsp unsalted butter, melted rich and creamy

    2 garlic cloves, minced for extra garlicky goodness

    1 tbsp parsley, chopped fresh and fragrant

    2 tbsp grated Parmesan cheese adds a cheesy kick

    Instructions:

    1. Preheat the Oven

    Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    2. Make the Meatloaf Mixture

    In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, pepper, and parsley.

    Mix gently until just combined – don’t overmix to keep it tender.

    3. Shape the Meatloaf

    Divide the mixture into 4 equal portions and shape into small logs.

    Place on the prepared baking sheet.

    4. Bake

    Drizzle the meatloaf logs with olive oil.

    Bake for 25–30 minutes or until the internal temperature reaches 165°F (74°C).

    5. Prepare the Garlic Butter Glaze

    While baking, combine melted butter, garlic, parsley, and Parmesan in a small bowl.

    6. Glaze and Optional Topping

    Once cooked, brush the garlic butter glaze over each meatloaf.

    For extra indulgence, top with shredded mozzarella and return to the oven for 3–5 minutes until melty and bubbly.

    7. Serve and Enjoy!

    Let rest for 5 minutes before serving.
