Ingredients:

For the Garlic Butter Chicken Bites

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 tbsp unsalted butter

4 cloves garlic, minced

1/4 cup fresh parsley, chopped

Salt & pepper, to taste

For the Parmesan Cream Sauce

1/4 cup butter

1/4 cup all-purpose flour

2 cups milk

1 cup grated Parmesan cheese

Salt & pepper, to taste

For the Cheesy Roasted Potatoes

1 lb small red potatoes, halved or quartered

2 tbsp olive oil

1/2 cup grated Parmesan cheese

1/4 tsp garlic powder

Salt & pepper, to taste

 

Directions:

Roast the Cheesy Potatoes

1. Preheat oven to 400°F (200°C).

2. In a bowl, toss potatoes with olive oil, Parmesan cheese, garlic powder, salt, and pepper.

3. Spread on a baking sheet and roast for 25–30 minutes until tender and golden brown.

 

Make the Garlic Butter Chicken

1. While potatoes roast, melt butter in a large skillet over medium heat.

2. Add minced garlic; sauté for 1 minute until fragrant.

3. Add chicken cubes; cook until golden and cooked through (8–10 minutes).

4. Stir in parsley, season with salt and pepper.

 

Prepare the Parmesan Cream Sauce

1. In a saucepan, melt butter over medium heat.

2. Whisk in flour and cook for 1 minute.

3. Gradually whisk in milk until smooth.

4. Bring to a gentle simmer, stirring until thickened.

5. Reduce heat, stir in Parmesan cheese, season with salt and pepper until melted and creamy.
