    Fried Potatoes and Onions

    Treat yourself to the mouthwatering delight of Fried Potatoes and Onions!

    Ingredients:
    – 2 lbs baby red potatoes (regular red or gold potatoes work too), cut into 1 – 1 1/2 inch pieces
    – 1 onion, sliced into thick half circles
    – 1 red bell pepper, cut into 1-inch pieces
    – 8 oz smoked sausage or kielbasa (smoked Polish kielbasa is a great choice), cut into 1-inch pieces
    – 8 oz fresh mushrooms (baby Bella, white button, etc.), halved or quartered
    – 1/4 cup olive oil
    – 4 garlic cloves, minced
    – 1 teaspoon fresh thyme
    – 1 tablespoon spice/dry herbs blend
    – Salt and ground black pepper to taste
    – Fresh herbs, minced (parsley, thyme, chives, dill, etc.)

    Instructions:
    1. Preheat your oven to 475 degrees Fahrenheit (if using convection setting, or adjust accordingly for regular oven). Place a large rimmed baking sheet in the oven to heat up while you prepare the

    ingredients.
    2. Scrub the potatoes thoroughly and cut them into 1 – 1½ inch pieces. Place them in a medium pot and cover with water, bringing it to a boil. Reduce heat and simmer for about 5 minutes, until potatoes are halfway cooked. Drain the potatoes.
    3. While the potatoes cook, prepare the other ingredients: halve or quarter the mushrooms, slice the onions, cut the bell pepper, and slice the sausage into 1-inch pieces.
    4. In a large bowl, toss together the onions, bell pepper, mushrooms, olive oil, minced garlic, fresh thyme, salt, pepper, and dry herbs blend.
    5. Once the potatoes are halfway cooked, gently toss them with the mushroom and pepper mixture, along with the sausage.
    6. Carefully remove the hot baking sheet from the oven and quickly spread out the potato and vegetable mixture in a single layer.
    7. Roast in the preheated oven, uncovered, for 20-30 minutes, until all the vegetables are cooked through and golden brown, flipping everything over halfway through cooking. For extra browning and a slight char, broil the dish during the last few minutes of cooking.
    8. Garnish with fresh minced herbs like parsley, thyme, chives, or dill.
    9. Serve and enjoy the deliciousness!
