Fresh Strawberry Sheet Cake 🍓😁
Ingredients:
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/2 cups sugar
– 4 large eggs
– 1 cup pureed strawberries, fresh or thawed from frozen
– 1 teaspoon vanilla extract
For the Strawberry Cream Cheese Icing:
– 1/2 cup unsalted butter, softened
– 8 ounces cream cheese, softened
– 4 cups powdered sugar, sifted
– 1/2 cup strawberry puree
– 1 teaspoon vanilla extract
For the Mascarpone Frosting (Alternative):
– 1 cup mascarpone cheese
– 1 cup heavy cream
– 1/2 cup powdered sugar
– 1 teaspoon vanilla extract
Instructions:
1. Preheat oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a large mixing bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
4. Alternately add dry ingredients and strawberry puree to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
5. Pour batter into the prepared pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
6. For cream cheese icing, beat together butter, cream cheese, powdered sugar, strawberry puree, and vanilla until smooth. For mascarpone frosting, whip together mascarpone, heavy cream, powdered sugar, and vanilla until stiff peaks form.
7. Once the cake is completely cooled, spread the frosting evenly over the top and garnish with fresh strawberries if desired. Enjoy!
